ingredients: 1. One thigh leg(with skin) and wing pieces-2 sets 2. One glass milk(fresh/boiled any milk is fine) 3. Salt according to taste 4. One spoon of ginger garlic paste/powder 5. Red chilli powder one spoon 6. White pepper 7. One lemon full 8. Two eggs (because two sets,if one set one egg is enough) 9. 1.5 cup maida(one and half cup), one table spoon corn flour 10. Black pepper.
Step-1: Poke to make holes all over the chicken for better marination.
Step-2: Marination process: now take a bowl add one glass milk,salt,one spoon ginger garlic paste,white pepper,red chilli powder,lemon,two eggs(if you are making one set of chicken pieces take one egg) mix well untill all ingredents gets mixed,and finally taste the sauce to adjust the salt or spice.
Step-3: Dip the chicken pieces in the sauce prepared for marination.keep rotating them clock wise and anti clockwise for few times and leave for soaking,now refrigerate for minimum 4 hours for fine marination. Step-4: preparation for coating flour take one and half cup maida,salt to taste(add consciously as we already added salt in marination)one spoon chilli powder,black pepper,if available add ginger garlic powder and mix the mixture well and finally add corn flour one full table spoon and mix it well.
Step-5: Take out the marinated chicken and give it a mix, now coat with flour and then dip in chilled water and re-coat with flour with care(this step is most important)now pick a chicken piece and coat well with flour give a quick dip in chilled water and re coat well with flour again do repeat for all chicken pieces. finally heat the oil,fry on medium flame for longer time then frying on quick flame, it helps chicken to get cooked well from inside and fry it untill it truns golden brown and take it out,drain out the oil completely to retain crispier outer layer for longer time.finally serve with sauce and enjoy the taste.
